Description

Cheesy Bacon Ranch Chicken is a quick, low-carb skillet dinner with juicy chicken, crispy bacon, melty cheese, and bold ranch flavor. Perfect for busy nights!


Ingredients

4 slices thick-cut bacon

4 boneless skinless chicken breasts (about 1 3/4 lbs.)

Kosher salt

Freshly ground black pepper

2 tsp. ranch seasoning

1 1/2 cups shredded mozzarella 

Chopped chives, for garnish


Instructions

  1. Heat a large skillet over medium and cook the bacon until crispy, flipping once—this should take about 8 minutes. Transfer the bacon to a plate lined with paper towels, then carefully drain the skillet, leaving about 2 tablespoons of bacon fat.
  2. Season the chicken breasts with salt and pepper. Increase the heat to medium-high, add the chicken to the skillet, and sear for roughly 6 minutes per side, or until golden and fully cooked.
  3. Lower the heat to medium, sprinkle ranch seasoning evenly over the chicken, and top each piece with shredded mozzarella. Cover and let it cook for another 5 minutes, or until the cheese is melted and bubbling.
  4. Finish by crumbling the bacon and scattering it over the chicken along with freshly chopped chives. Serve warm.
