Crispy and packed with flavor, these chicken chips are the perfect high-protein, low-carb snack. Made with seasoned ground chicken and baked until crunchy, they’re an easy, guilt-free alternative to regular chips.

1 lb. chicken thighs (ground)
¾ teaspoon sea salt
¼ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon paprika
½ teaspoon chipotle pepper
¼ teaspoon cumin
1 teaspoon nutritional yeast
Instructions
- Preheat the oven to 300°F (150°C).
- If you’re using whole chicken thighs, cut them into smaller chunks, then run them through a meat grinder or food processor. Place the ground chicken into a medium-sized bowl.
- In a separate small bowl, combine all your spices. Add the spice mix to the ground chicken and stir thoroughly with a rubber spatula until well combined. For a smoother texture, pass the chicken mixture through the grinder or processor one more time until it becomes paste-like.
- Tear a sheet of parchment paper to fit a large baking tray. Place half of the chicken paste in the center of the parchment. Lay a sheet of cling film over the top (cut to the same size as the parchment), then roll the chicken out with a rolling pin until it’s as thin as possible.
- Remove the cling film and carefully transfer the parchment paper with the flattened chicken onto the baking tray. Bake for 35–45 minutes, or until the chicken is crispy but not overly browned. Ovens can vary, so begin checking at the 30-minute mark and adjust the time as needed.
- Take the large chicken chip out of the oven and let it cool for about 5 minutes. If it isn’t crisp enough, return it to the oven for an additional 5–10 minutes.
- Once fully crisp, break the sheet into smaller chips. Serve alongside guacamole or your favorite dipping sauce for the perfect snack!
