Ingredients

¾ cup butter (softened)
1¼ cup brown sugar substitute
2 large eggs
1½ tsp vanilla extract
2 cups almond flour
2 tbsp grassfed gelatin (optional)
1½ tsp baking powder
1 tsp baking soda
½ tsp salt
1 cup unsweetened flaked coconut
1 cup chopped pecans
1 cup sugar-free dark chocolate chips
Instructions
- Preheat oven to 325°F and line 2 cookie sheets.
- Cream butter and sweetener for 2 mins.
- Beat in eggs and vanilla.
- Add dry ingredients and mix until combined.
- Fold in coconut, pecans, and chocolate chips.
- Scoop into 2-inch balls, press to ¾ inch thick.
- Bake 15–20 mins, rotating trays halfway.
- Cool completely on pans before serving.
