Bold, balanced, and downright delicious — this sweet potato and beef bowl with creamy cottage cheese is the ultimate 30-minute dinner. It’s sweet, savory, a little spicy, and totally satisfying with every bite!


Ingredients

2 medium/large sweet potato, cubed

2 teaspoon olive or avocado oil

½ teaspoon sea salt

½ teaspoon garlic powder

⅛ teaspoon black pepper

1 pound lean ground beef, I like 90/10 (optional)

23 Tablespoons taco seasoning, adjust to taste

2 Tablespoons water, if needed

1 cup cottage cheese, I like good culture

1 avocado, chopped

4 teaspoons hot honey

hot sauce

pickled onions and/or hot and sweet jalapeños


Instructions

  1. Start by preheating your oven to 400°F (200°C). In a bowl, toss the sweet potato cubes with olive oil, garlic powder, salt, and black pepper until evenly coated. Arrange them in a single layer on a baking tray and roast for 20 minutes, turning them halfway through for even browning. Alternatively, you can crisp them up quickly in an air fryer.
  2. While the potatoes are roasting, warm a skillet over medium-high heat. Add the ground beef and break it apart with a spatula as it cooks. Sauté until fully browned, about 6–7 minutes. Stir in the taco seasoning, and if the mixture seems dry, splash in a bit of water to keep it juicy.
  3. To serve, portion the roasted sweet potatoes into four bowls. Layer on the seasoned ground beef, then add a generous spoonful of cottage cheese. Finish each bowl with chopped avocado, a dash of hot sauce, and a drizzle of hot honey. Dig in and enjoy a flavorful, protein-packed meal!
